Low Carb Chicken Bacon Salad Recipe

Low Carb Chicken Bacon Salad
1 can chicken breast (or 1 cup chopped rotisserie or cooked chicken)
4 Tbsp Mayo or miracle whip 
2 Tbsp sour cream
2 Tbsp cheddar cheese (shredded)
3 Tbsp bacon bits
1/8 cup chopped onion


Mix together and serve on lettuce leaf
Total carbs for entire recipe made with miracle whip =12...even less with mayo

Beulah's Yeast Biscuits

Recipe for Beulah's Yeast Biscuits
4 C self rising flour
1/3 C Sugar
1 tsp soda
1/2 tsp salt
1/2 cup shortening
1 pkg yeast
1/2 cup warm water
1 1/2 cup buttermilk

Sift dry ingredients together. Cut in shortening. Dissolve yeast in warm water and add to dough along with buttermilk. Put in lightly greased bowl & refrigerate overnight. Or pull out amount needed & cut into biscuits. Bake 425 degrees 10-20 minutes until done. Keep in refrigerator for 1 week. Baste with melted butter before baking or after.

Quinoa Salad Recipe

Recipe by Beulah Wilford

3 cups quinoa
6 cups water
5 medium garlic cloves, minced
1 medium white onion
1 can black beans, rinsed and drained
1 cucumber, seeded or 1 zucchini
1 pint cherry or grape tomatoes, sliced in half

Instructions: Bring water to a boil then add quinoa. Bring to a boil again. Lower heat and simmer for 15-20 minutes. Cool, overnight if possible. Add the garlic, onion, cucumber, tomatoes, and black beans. Toss with dressing. For better flavor, mix all ingredients, including dressing, while grains are still warm and refrigerate overnight.

Dressing:
1/4 cup flax oil
1/4 cup olive oil
1/2 cup balsamic vinegar
1 Tbsp Lemon juice
Xagave (sugar substitute) to taste
Salt and pepper to taste
1 tsp Mrs. Dash

Bouillabaisse Recipe

Bouillabaisse Recipe by Beulah Wilford

Serves 4

2 Tbsp. Olive Oil
1 Tbsp. butter
2 Large Chopped Onions
2 Cloves of chopped garlic
4 cups boiling water
1 pound scallops
1 pound filets of fish
4 cloves
2 bay leaves
1/2 cup cooking sherry
1 4 oz. can mushrooms
1 pound of shrimp
1 tsp. curry powder
1/2 cup chopped celery
1 lg. can tomatoes
8 large crabs with claws

Heat oil and butter in large cooker.  Saute onions, garlic, and celery in it for 5 min., stirring constantly. Add boiling water, fish and scallops together with cloves and bay leaves. Cover and simmer for 10 minutes. Add tomatoes, blend curry powder with 2 Tbsp. sherry and 2 tsp. sugar. Add to mixture, cover and cook 10 minutes. Add shrimp, cleaned crabs in shell with claws and mushrooms. Cover and cook 5 minutes. Add rest of sherry, 3 tsp. salt, 1/4 tsp. pepper. Cook over low heat for 5 min. Serve in 4 large bowls with garlic bread.

Beulah's Sweet Relish Recipe

Once you try this relish, you'll never want to eat store bought relish again!

18 lbs. chopped cucumbers
12 large copped onions
8 large chopped green peppers
1 1/2 cups salt
12 cups cider vinegar
14 cups sugar
5 tsp. ground tumeric
6 Tbsp. mustard seed
8 Tbsp. celery seed
48 whole cloves tied in cheese cloth
Ice Cubes
Chop vegetables in food processor until they are the size you like.  Mix chopped cucumbers, onions, & peppers. In a 5 gal. white bucket, put this in 3 layers adding 1/3 salt each layer and adding ice cubes on top of each layer. Cover top with ice cubes and weigh down with heavy plate; set aside for at least 3 hours. Meanwhile, combine vinegar, sugar, and spices in a large kettle.  Bring to a boil and add well drained vegetables. Make sure there is no ice. Heat, bring to a boil, stirring occasionally with wooden spoon. Pack into hot sterilized jars and seal (hot water bath). This makes 12-14 quarts.

Debbie's Famous Meatloaf

This is my mother's recipe for Meatloaf...I haven't been able to find one better!!

Serves 8

1 1/2 lbs. ground hamburger
3 lightly beaten eggs
3 slices of bread soaked in water
1 tsp. oregano
1 tsp. minced garlic
1 tsp. salt
1/2 tsp. pepper
1 chopped onion
1/2 chopped green pepper
1/2 cup ketchup
1 Tbsp. worcestershire sauce

Combine hamburger and eggs: mix well. Squeeze excess water from bread; break into pieces. Add bread, seasonings, onion, green pepper, worcestershire, and 1/4 cup ketchup to hamburger: mix well with hands. Let stand for 15 minutes. Shape into loaf: place in baking pan. Pour remaining ketchup over top. Bake in preheated 325 degree over for 1 hour.
